  • Flour tortillas – can also serve over toast or hash browns 
  • Olive oil spray for frying – can also use avocado oil spray
  • Optional – hot sauce, fresh herbs, cherry tomatoes, bagel seasoning, or pesto for the viral pesto eggs version.

HOW TO MAKE

  1. Spray a small nonstick skillet with non-stick cooking spray over medium heat. Crumble the feta cheese in a circle.
  2. Allow the feta cheese to cook for a minute or two so it melts. Then crack the egg in the centre of the pan.
  3. Season the egg with black pepper and red pepper flakes. Cover pan and cook the egg to your liking, but it’s best when there is still a runny egg yolk.
  4. Heat the tortilla on a gas flame until it becomes a charred tortilla. Alternatively you can use the microwave.
  5. Add the mashed avocado and lime juice to the tortilla shell. Once the egg is cooked through and it becomes crispy, place on the tortilla. Enjoy your cheesy crust breakfast taco.
