Protein Marshmallows Recipe

If youโ€™ve ever dreamed of eating marshmallows that actually fit your macrosโ€”this oneโ€™s for you. This protein marshmallows recipe is light, fluffy, and taste like a treat, but with a serious protein punch. Think classic childhood vibes meets gym-girl energy.

I call them the unicorn edition because theyโ€™re kinda magical. Made with just Fairlife milk, gelatin, and protein powder, theyโ€™re simple, sweet, and surprisingly high in protein.

You can snack on them straight from the fridge, toss them in hot chocolate, or chop them up for topping your overnight oats. Honestly, once you make them, youโ€™ll wonder why you ever bought the store-bought kind.

Theyโ€™re creamy, bouncy, and perfectly sweet without all the extra sugar.

The best part? You only need three ingredients and about ten minutes of effort. Letโ€™s get into it.

Simple Ingredients You Need For The Fluffy Homemade Marshmallows

You will need the following ingredients listed below to make the gelatin mixture (the exact measurements and instructions, nutrition information and full recipe are in the printable recipe card at the bottom of the post):

  • Fat-free Fairlife milk
  • Gelatin
  • Whey protein powder – I used Unicorn Donut whey protein powder but you can use vanilla protein powder
  • Optional – extra sprinkles, powdered sugar, cane sugar, honey, cinnamon, vanilla extract, etc.

How To Make

  1. Pour the milk into a small saucepan and sprinkle the gelatin on top. Let it sit for about 5 minutes so the gelatin can bloom.
  2. Heat the mixture over low heat, whisking constantly, until it thins out and is no longer frothy. Donโ€™t let it boilโ€”just warm enough to dissolve the gelatin.
  3. Remove from heat and let it cool for a few minutes.
  4. Transfer the mixture to a stand mixer bowl then add in your protein powder.
  5. Whisk on high speed for about 5โ€“8 minutes, or until soft peaks form and it starts looking fluffy and glossy.
  6. Pour into a parchment paper lined baking pan or container, smooth the top, and refrigerate until fully set (about 2โ€“3 hours).
  7. Slice into squares using a sharp knife, toss in powdered sugar and store in the fridge.

Tips And Tricks For Best Results

  • Use a flavored protein powder to make them taste extra goodโ€”vanilla, strawberry, or anything โ€œunicornโ€ is perfect.
  • Donโ€™t skip the cooling step before adding protein powder, or it might clump.
  • For fluffier marshmallows, whip a bit longer into stiff peaks.
  • Want a sweeter version? Add a few drops of vanilla extract or a touch of stevia.

Ingredients 

  • 2 cups Fairlife fat free milk
  • 4 tbsp gelatin
  • 3 scoops protein powder I used Unicorn Donut protein powder from 1UP Nutrition (use code BAILS at checkout to save on all products). Can also use vanilla protein powder.
