Viral Blanket Dumplings Recipe (No Fold, One Pan, 30 Minutes)

This viral blanket dumplings recipe is juicy, crispy, and packed with bold flavour. Made with ground chicken and simple ingredients, it comes together fast in one pan. Perfect for an easy, takeout-style dinner at home.

Blanket dumplings are the recipe that made me feel like I’d been folding dumplings wrong my entire life. Spoiler: I had.

A blanket dumpling is a steamed dumpling made by dropping raw seasoned meat directly into a pan, draping a wonton wrapper over the top like a little cozy blanket, and cooking it until the bottom is golden and crispy. No folding. No crimping and no YouTube tutorial required.

I’ve made these more times than I’ll admit โ€” testing different seasonings, steam times, and spice levels โ€” and this ground chicken version with sriracha and sesame oil is the one that lives in my weekly rotation now.

The bottoms get that incredible potsticker-style crunch while the tops stay soft and chewy. It’s the kind of dinner that feels like takeout but costs about $8 and takes 30 minutes.

Ingredients You’ll Need

(Full measurements are in the recipe card below.)

  • Ground chicken โ€” lean and high protein. Ground turkey or ground pork swap in 1:1. Pork gives you a more traditional dumpling flavour; turkey keeps it lighter.
  • Green onions โ€” adds freshness and a mild bite throughout the filling.
  • Garlic โ€” fresh minced garlic gives the best flavour. Jarred works in a pinch.
  • Carrot โ€” finely grated. Adds subtle sweetness and moisture to the filling so it stays juicy. Use a box grater โ€” don’t skip it.
  • Ginger powder โ€” adds warmth and that classic dumpling flavour. Fresh grated ginger works too and is slightly more punchy.
  • Sesame oil โ€” this is what makes these taste like a real dumpling and not just a meatball. Don’t substitute it.
  • Soy sauce โ€” or tamari for a gluten-free version.
  • Rice vinegar โ€” adds a subtle tang that balances the richness of the meat.
  • Sriracha โ€” adjust to your spice tolerance. Leave it out entirely if cooking for kids.
  • Wonton wrappers โ€” find these in the refrigerated section of most grocery stores, usually near the tofu or produce. If you can’t find them, try an Asian grocery store. Square wonton wrappers work great here.

For the dipping sauce:

  • Soy sauce, rice vinegar, chili onion crunch, and optional sriracha โ€” whisk together and serve alongside.

How to Make Viral Blanket Dumplings

  1. Mix the filling. In a large bowl, combine the ground chicken, green onions, garlic, grated carrot, ginger powder, black pepper, salt, rice vinegar, sesame oil, soy sauce, and sriracha. Mix until fully combined.
  2. Heat the pan. Warm a large non-stick skillet over medium heat and add a light drizzle of neutral oil.
  3. Scoop into the pan. Using a small ice cream scoop or large spoon, scoop portions of the chicken mixture and place them directly into the pan, spaced slightly apart.
  4. Drape the wrappers. Place one wonton wrapper over each chicken scoop and press it down firmly around the sides so it hugs the meat completely.
  5. Add water and steam. Pour โ…“ cup of water into the pan and immediately cover with a lid. Cook for 5โ€“7 minutes until the chicken is fully cooked through and the wrappers are soft and translucent.
  6. Crisp the bottoms. Remove the lid and let the water evaporate completely. Cook another 1โ€“2 minutes until the bottoms are golden and crispy โ€” don’t move them, let the crust develop.
  7. Serve immediately with dipping sauce, sliced green onions, sesame seeds, and chili onion crunch.

Tips for the Best Blanket Dumplings

Don’t make the scoops too big. Oversized portions won’t cook through evenly during the steam time. Keep them roughly the size of a golf ball โ€” when in doubt, go smaller.

Press the wrapper down firmly. You want it actually hugging the meat, not just loosely sitting on top. A tight wrap means a better shape, sturdier dumpling, and crispier bottom.

Keep the heat at medium โ€” not high. Too hot and the bottoms burn before the inside cooks through. Medium heat gives you that golden crust at exactly the same time the steam finishes the meat.

Don’t lift the lid during steaming. Every time you peek you lose steam and extend the cooking time. Set a 6-minute timer and leave it alone.

How to know they’re done: The wonton wrapper will turn from opaque white to soft and translucent. If you’re unsure, cut one open โ€” no pink, fully cooked through.

Variations

  • Ground pork โ€” the most traditional option, slightly richer and fattier than chicken. Delicious.
  • Ground turkey โ€” even leaner than chicken, works exactly the same way.
  • Spice level โ€” leave out the sriracha entirely for a mild version, or double it for heat. A spoonful of chili crisp in the filling is also excellent.
  • Add cabbage โ€” finely shredded napa cabbage mixed into the filling adds volume and a classic dumpling texture. Squeeze out excess moisture first.

Make-Ahead and Storage

Make ahead: Mix the filling up to 24 hours ahead and store covered in the fridge. Cook fresh when ready.

Freeze: Scoop the raw filling onto a parchment-lined baking sheet and freeze until solid, then transfer to a zip-lock bag for up to 3 months. Add 2โ€“3 extra minutes to the steam time when cooking from frozen.

Leftovers: Store in an airtight container in the fridge for up to 3 days. Reheat in a dry non-stick pan over medium heat for 2โ€“3 minutes to re-crisp the bottoms โ€” avoid the microwave, it makes the wrappers soggy.

FOR CHICKEN DUMPLINGS

  • 450 g ground chicken
  • 4 green onions thinly sliced
  • 1 small carrot finely grated
  • 1 tbsp minced garlic
  • 1 tsp ginger powder
  • 1 tsp black pepper
  • ยฝ tsp salt
  • 1 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp sriracha
  • 20 wonton wrappers
  • green onions for topping
  • chili onion crunch for topping
  • sesame seeds for topping

FOR DIPPING SAUCE

  • 2 tbsp soy sauce
  • ยฝ tbsp rice vinegar
  • 1 tbsp sriracha
  • 1 tsp chili onion crunch

Instructions

  • In a large bowl, combine the ground chicken, green onions, garlic, grated carrot, ginger powder, black pepper, salt, rice vinegar, sesame oil, soy sauce, and sriracha. Mix until fully combined.
  • Heat a large pan over medium heat and lightly oil it.
  • Scoop a small ice cream scoop-sized portion of the chicken mixture and place it directly into the pan. Repeat, spacing them slightly apart.
  • Place a wonton wrapper over each portion and gently press it around the chicken to wrap and shape it.
  • Pour about 1/3 cup of water into the pan, cover with a lid, and let cook for 5โ€“7 minutes until the chicken is fully cooked through.
  • Remove the lid and allow any excess water to evaporate. Let the bottoms crisp up slightly if desired.
  • Serve immediately with more fresh green onions, chili onion crunch, sesame seeds and your favorite dipping sauce.
