SIMPLE INGREDIENTS YOU NEED FOR THE COTTAGE CHEESE BREAD RECIPE
You will need the following ingredients listed below to make these flatbread recipe (the exact measurements, nutritional value and full recipe are in the printable recipe card at the bottom of this post):
- Cottage cheese – a cup of cottage cheese is all you need. Full-fat cottage cheese is best.
- Egg whites – can also use a whole egg or two
- Garlic powder
- Italian seasoning
- Salt
- Black pepper
- Optional – fresh herbs, onion powder, flaxseed, gluten-free flour, cheddar cheese, whole large eggs, olive oil, etc.
HOW TO MAKE
- Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- In a blender, add the cottage cheese (excess liquid drained), eggs, garlic powder, Italian seasoning, and a good pinch of salt and pepper until well combined. You can also use an immersion blender for this step, or a food processor.
- Spray your parchment-lined baking sheet with non-stick cooking spray, then pour the cottage cheese mixture on. Spread it out evenly. You do not want it too thin, try to leave it about 1/2 inch thick.
- Bake in the oven for 35 to 40 minutes or until the flat bread has turned a golden brown color. Some recipes call for 30-35 minutes, however I have found 30 minutes too short.
- Let cool for 10 minutes, until it has firmed up. This is very important as it will break apart if you remove it before it cools completely. Then top with your favorite toppings. I used light mayo, mustard, turkey, tomato, spinach, and avocado.
TIPS AND TRICKS FOR BEST RESULTS
- Experiment with Flavors: Feel free to throw in extra seasonings or herbs into the mix. Things like rosemary, thyme, or even a pinch of cayenne can add a whole new dimension.
- Get Creative with Toppings: After cooking, top it with anything from avocado slices and smoked salmon to a simple spread of hummus.
- Making in Advance?: You can make the low carb flatbread ahead of time and store it in the fridge, covered, for when you need it. However, it is much better made fresh.

FAQS
CAN I MAKE THIS RECIPE IN AN AIR FRYER OR TOASTER OVEN?
Yes, absolutely. As long as your air fryer has a tray or flat surface you can add the cottage cheese mixture on, this will work perfectly fine.
You may however have to adjust cooking time.
WHAT SHOULD I DO IF MY DOUGH IS TOO WET?
If it’s too wet and sticky, add 1 tbsp of gluten-free flour.
CAN I TURN THIS HIGH-PROTEIN FLATBREAD INTO A PIZZA CRUST?
Yes, here is my recipe for a Cottage Cheese Pizza Crust Recipe. Instead of using your favorite sandwich toppings you will swap for tomato sauce, cheese and pepperoni.
WHY SHOULD I USE FULL FAT COTTAGE CHEESE IN THIS VIRAL RECIPE?
Using full-fat cottage cheese in your flatbread recipe is a great choice because it provides a richer, creamier texture and more robust flavor compared to low fat cottage cheese or fat-free versions.
CAN I USE DIFFERENT TOPPINGS FOR THE FLATBREAD?
Yes, of course! This is your own flatbread, the world is your oyster! Here are a few suggestions.
- Mediterranean Delight: Top your flatbread with a spread of hummus, slices of kalamata olives, chopped tomatoes, cucumber, red onion, and a sprinkle of feta cheese. Finish with a drizzle of olive oil and a squeeze of lemon for a fresh, Mediterranean-inspired treat.
- BBQ Chicken: Spread BBQ sauce over your flatbread, then add cooked, shredded chicken, red onions, and a mix of cheddar and mozzarella cheese. Bake until the cheese is bubbly and golden. Garnish with fresh cilantro after baking for an extra touch of flavor.
- Classic Margherita: Brush the flatbread with olive oil and garlic, then top with slices of fresh mozzarella, tomatoes, and fresh basil leaves. Season with salt and pepper, and a drizzle of balsamic glaze for a classic Italian taste.
- Pesto and Pine Nut: Spread a thin layer of pesto over the flatbread, sprinkle with pine nuts, dollops of ricotta cheese, and arugula. This combination offers a nutty and creamy texture that’s both satisfying and aromatic.
- Spicy Pepperoni: Layer on slices of pepperoni, jalapeño peppers, and mozzarella cheese for those who enjoy a spicier topping. Add a sprinkle of red chili flakes and a light dusting of parmesan cheese before serving.

I liked your cottage cheese recipe 😋
I made this exactly like the recipe, and it stuck to the Parchment paper! Bad, I had to thriw it out. Do you need to spray the paper?
Hi Tina,
No, the key is allowing it enough time to really cool off! Once it’s cool it comes off nicely, and is firm enough that it won’t fall apart. If it’s still stuck you can run something underneath to loosen it from the parchment paper. I hope this helps!!
Five (zillion) stars ⭐️⭐️⭐️⭐️⭐️
Absolutely amazing!!! I think I just broke up with white bread (which is my guilty pleasure). Thank you for this recipe, and here’s the better (and delicious) choices!
I made the recipe as shown but used a creole seasoning instead of all the other spices. I used the WalMart Great Value 4% cottage cheese. It is dryer than other brands that I use. Baked up witha beautiful golden brown and released from the parchment paper by just lifting it with my fingers. I only baked it for 25 minutes. After turning it over, I put it back in the oven as it cooled for another 10 minutes to allow for additional reduction of moisture. The flavor was surprising. Very tasty for a low carb “bread”. The egg flavor was dominated by a combination of the browning as well as the spice.
How should I store this? In fridge? It’s really great!
Hi Michelle,
Yes in the fridge!! 🙂
My son told me about this flatbread a couple of days ago and I made it today.
This recipe is ABSOLUTELY AMAZING!!! I topped it with Everything Bagel seasoning.
DELICIOUS! I’m going to make another batch today, the first batch is almost gone already.
No more white bread for me.
Thank you for the recipe! 😛
This flatbread is sooooo good. Followed the exact recipe except cooked it for 40 minutes at 300 degrees. Tastes phenomenal!!! Made a veggie flatbread pizza.
Nice recipe. My first try and it turned out great. Used some different seasonings. No trouble with the sticking to the paper. I wonder how easy this would be to freeze? Anyone know?
Yes, you can freeze it. I place either wax paper or parchment between layers and freeze in a freezer zip baggie. You can thaw quick in the microwave or on the counter and then microwave for a few seconds to restore it to it’s original texture. Yummy!!
I don’t care for cottage cheese but this flat bread is excellent. I added everything bagel sesame seed seasoning on top 😋,😉
I made this the other day. It’s fantastic. I shredded some cheddar and used “everything bagel” seasoning. I think I would probably bake a bit longer to get it even more crispy. It’s a real treat! I happened to leave the small piece leftover on a plate on the counter and it was even more crispy the following day.
This is awesome recipe! I’ve made it multiple times. I used it for pizza crust. Added tons of toppings and broiled it about 7-10 minutes depending on how much toppings I added. It’s taste amazing! We don’t miss pizza crust at all! Highly recommend to anyone who is limiting carbs.
Great recipe. My husband and I both love it. Thank you.
