Air Fryer Steak Fries (Homemade Recipe)

Crispy air fryer steak fries with a fluffy interior, ready in 20 minutes with just 3 ingredients. The perfect side dish for burgers, tacos, or chicken tenders โ€” with way less oil than deep-fried.

Air fryer steak fries are thick-cut potato wedges seasoned and cooked at 400ยฐF for 15-18 minutes. The hot circulating air gives you crispy exteriors and fluffy interiors with way less oil than deep-frying โ€” about 1 tablespoon of oil for the whole batch instead of the cup or more used for traditional fries.

These are the side dish I make weekly. Russet potatoes, a little oil, salt and pepper, into the air fryer. They come out crispy without the mess of stovetop frying or the calories of restaurant fries.

Ingredients You’ll Need

  • Russet potatoes โ€” the high starch content is what gives you that fluffy interior and crispy exterior. Yukon Gold also works and produces a creamier inside with a slightly less crispy outside. I keep the skins on for extra crunch and nutrients, but you can peel them if you prefer.
  • Olive oil or avocado oil โ€” avocado oil has a higher smoke point and is my go-to. Olive oil works too. Avocado oil spray is the easiest way to get even coverage without overdoing it. Skip vegetable oil if you can.
  • Salt, pepper, and Cajun seasoning โ€” my standard mix. Garlic powder + onion powder + paprika is the most popular combo across recipes. Use whatever blend works for you (more variations below).
  • Optional: parmesan cheese, fresh rosemary, fresh thyme, or any dipping sauce you love.

How to Make Air Fryer Steak Fries

  1. Preheat the air fryer to 400ยฐF. This matters โ€” cold air fryer = soggy fries.
  2. Wash and cut the potatoes. Scrub the skins clean. Cut each potato lengthwise into 8 wedges (cut in half, then each half into quarters).
  3. Optional but recommended: soak in cold water. Place the cut wedges in a large bowl of cold water for 20-30 minutes. This pulls out excess starch and is the single biggest trick for extra-crispy fries.
  4. Dry thoroughly. If you soaked them, pat completely dry with a clean towel or paper towels. Wet potatoes will steam instead of crisp โ€” this is the #1 reason for soggy air fryer fries.
  5. Season. Place dried wedges in a large bowl, toss with oil first (helps the seasonings stick), then add salt, pepper, and Cajun seasoning. Toss to coat.
  6. Air fry. Place wedges in the basket in a single layer, not touching. Cook 15-18 minutes, shaking the basket or flipping the wedges halfway through.
  7. Check and serve. Pull when golden and crisp. Add a finishing sprinkle of flaky sea salt and serve immediately with your favorite dipping sauce.

Tips for Extra Crispy Fries

  1. Soak the potatoes in cold water for 20-30 minutes. This is the trick that takes them from good to restaurant-quality. The cold water pulls out surface starch, which is what makes fries soggy. Skip this and you get fine fries. Do it and you get great fries.
  2. Dry them completely before air frying. Any surface moisture turns to steam inside the air fryer and ruins the crisp.
  3. Don’t overcrowd the basket. This is the #1 reason for soggy fries. Wedges need space for the hot air to circulate. Cook 2 russet potatoes in 2-3 batches if your air fryer is small โ€” better fries from 2 batches than soggy fries from one overpacked batch.
  4. Oil the potatoes, not the basket. Toss the wedges with oil in a bowl before adding to the basket. This gives you even coverage with way less oil than spraying the basket.
  5. Air fryers vary โ€” check at 15 minutes. Cooking times depend heavily on your machine. Basket-style air fryers tend to crisp faster than oven-style. Check at the 15-minute mark and add 3-5 minutes if needed.

Seasoning Variations

  • Cajun: Cajun seasoning + smoked paprika (my go-to)
  • Garlic parmesan: Garlic powder + grated parmesan tossed on after cooking
  • Ranch: Dried dill + onion powder + garlic powder + parsley
  • Smoky: Smoked paprika + chili powder + cumin
  • Loaded: Cook plain, top with shredded cheddar + bacon + green onions + sour cream
  • Truffle: Toss with truffle oil and finish with flaky salt
  • Rosemary garlic: Fresh rosemary + minced garlic + olive oil

What to Serve With Air Fryer Steak Fries

These are made for pairing with a main. A few favorites:

Dipping sauces: ketchup, ranch, garlic aioli, sriracha mayo, honey mustard, fry sauce, blue cheese dressing, BBQ sauce.

How to Store and Reheat

Air fryer steak fries are best fresh โ€” they lose their crisp once cool. But leftovers do work if you reheat them right.

  • Store in an airtight container in the fridge for up to 3 days.
  • Reheat in the air fryer at 380ยฐF for 3-4 minutes โ€” this is the only reheat method that restores the crisp. Microwave makes them rubbery. Oven works but takes longer.
  • Don’t freeze โ€” frozen leftovers turn mealy when thawed.

Ingredients 

  • 2 russet potatoes
  • 2 tbsp avocado or olive oil
  • salt + pepper + cajun

Instructions

  • Wash potatoes thoroughly and cut into wedges on a cutting board. Place in a large bowl.
  • Add olive oil and seasonings to the potatoes and toss to combine. Make sure everything is evenly coated.
  • Add to the air fryer basket in a single layer so they are not touching.
  • Air fry at 400 degrees F for 15-18 minutes, flipping and tossing half way through.
  • Remove from fryer and serve with ketchup or your favorite dipping sauce. I like to add fresh herbs and course sea salt as well.

  3. Thank you for sharing this. I made these yesterday and the potatoes were really good. I had to add some more time to get them crispier. My air fryer is the toaster oven style and I’m still learning how to get things crispy. I used a seasoned salt I have and it was good.
