WHY YOU’LL LOVE THESE CHOCOLATE PEPPERMINT PROTEIN ENERGY BALLS

In traditional truffle recipes you use cream cheese, heavy cream, and sometimes even cake batter. These are created a bit more mindfully for a slightly healthier treat for the festive season.

The best part about this truffle mixture is you can switch it up with so many different flavors and colors. You could bake gingerbread truffles, oreo truffles or cheesecake truffles.

This is a no bake recipe and requires very simple ingredients. The next easy treat to add to your Christmas baking repertoire.

SIMPLE HEALTHY INGREDIENTS FOR THE CHOCOLATE PEPPERMINT PROTEIN BALLS

You will need the following ingredients listed below to make this healthy holiday treat (the exact measurements, nutrition information and full recipe are in the printable recipe card below):

  • Pitted Medjool Dates – these add sweetness to this perfect treat while also binding the recipe together.
  • Cashews – ensure these are soaked in hot water or boiled to give the truffles their creamy texture.
  • Unsweetened cocoa powder or raw cacao powder – as a chocolate lover I think it’s a requirement to have chocolate in truffles. They are like heavenly chocolates, but I know some may prefer different flavors of truffles! Use a high quality cocoa powder is this is used for the chocolate ganache filling.
  • Salt
  • Peppermint extract – you can leave this out if you don’t want a peppermint flavor. Since this is a Christmas truffles recipe, I do recommend using it.
  • Vanilla extract
  • Chocolate protein powder – this is included in most of my truffle recipes to regulate blood sugar. Depending on the type of protein powder you may need a bit of cold water to thin out the recipe.
  • Chocolate – can use chocolate chips, milk chocolate, or dark chocolate. Can also use vegan chocolate chips.
  • Coconut oil – this will need to be melted from room temperature in order to get the silky chocolate around the truffles.
  • Optional – peppermint candy canes, green sprinkles, graham crackers, almond butter, maple syrup, cashew butter, almond flour, cacao nibs, etc. For a creamy white chocolate shell use white candy melts instead of the chocolate and coconut oil.

HOW TO MAKE HOMEMADE CHOCOLATE TRUFFLES

  1. Soak the dates in very hot water in a small saucepan for 1-2 hours. Or boil for 10-15 minutes.
  2. Prepare a cookie sheet by lining it with parchment paper and set aside.
  3. Using a food processor, blend the nuts. Do not over blend into a nut butter, but blend enough until a fine meal forms. Then add cocoa powder and salt. Once fully blended, remove from processor and transfer to a medium size bowl.
  4. Drain water from dates, and add them to a food processor. Blend till they are broken down and ball forms. Then add the cocoa powder and salt back in and blend.
  5. Add the peppermint and vanilla extracts and the chocolate protein powder. Pulse until everything is well combined. If the batter is too dry, add a tbsp of water at a time till you reach the perfect consistency.
  6. Roll mixture into balls using your hands. Place each ball on lined baking sheet. This makes 8 larger balls or 15-16 smaller balls. Once formed, freeze them for 15-20 minutes till they are hard.
  7. Melt chocolate and coconut oil in microwave using a microwave-safe bowl or in a double boiler over low heat. Using a fork, place a frozen truffle into the melted chocolate and mix it around so it’s evenly coated. Add crushed candy canes to the top of each truffle and put back in freezer to set for 2-3 minutes! Enjoy your chocolate peppermint protein truffles recipe!

STORING AND FREEZING THIS SIMPLE HOLIDAY TREAT

Store these chocolate peppermint protein truffles in the fridge in an airtight container. They will melt slightly if not stored in the refrigerator.

Or wrap them up and give as gifts for Christmas, Valentine’s Day, birthdays, or thank you presents to friends and family who live in your area.

This easy chocolate truffles recipe is perfect for making ahead and storing in the freezer. Follow the instructions and transfer to an freezer bag or airtight container and freeze for up to 3 months.

When ready to serve, it’s a great idea to let them thaw in the refrigerator before serving.

DIFFERENT FLAVOR IDEAS

As much as I love a good chocolate coating, there are many other flavors of truffles you can try.

Some of my other favorite flavors are sugar cookie truffles, white chocolate raspberry truffles, or boozy Christmas chocolate truffles. These flavours are all perfect for the holiday season.

Red velvet cake truffles, or something similar like snowman oreo balls would be delicious for any time of year.

Adding pumpkin spice to your batter and using white candy melts will results in a pumpkin spice truffle recipe. These would be perfect for Thanksgiving, Halloween or other special occasions in the Fall.

HOW TO MAKE THEM INTO CREAMY VEGAN TRUFFLES

This recipe is vegan as long as the chocolate protein that’s used is plant based. If you aren’t worried about making them vegan than you can opt for regular chocolate protein powder.

You can find most of the ingredients in the baking aisle, and they are all very affordable aside from the cashews. Just because these are vegan does not mean they follow a low calorie diet, so just be aware of that.

CAN I USE ANY TYPE OF CHOCOLATE FOR THIS EASY SNACK?

You can use good quality chocolate bars or chocolate chips. For the best results, choose chocolate with at least 60% cocoa content for a rich flavor in this chocolate peppermint truffles recipe.

HOW DO I GET THE TRUFFLES INTO UNIFORM SHAPES?

Using a melon baller, a small spoon, or a small cookie scoop to even out portions of the chilled truffle mixture and then roll them between your palms to form uniform balls.

Ingredients
