High Protein McGriddle Bites (13g Protein)

These high protein McGriddle bites are sausage, cheddar, and maple baked into protein pancake batter, so you get the whole sweet and savory McGriddle in a grab-and-go bite. Each one has 13g of protein and they’re built for meal prep.

I keep a batch of these in my fridge at all times because they’re what stops me from hitting a drive-thru on a busy morning. High protein McGriddle bites are sausage, cheddar, and maple baked into protein pancake batter in a muffin tin, so you get the whole sweet and savory McGriddle situation in a grab-and-go bite. Each one has 13g of protein.

I use Kodiak mix for the base, brown the sausage, fold everything together, and bake. The maple goes into the batter so every bite is sweet and savory at once, the cheddar gets melty, and the sausage keeps them hearty enough to actually hold you over.

I make a batch on Sunday and they’re breakfast for the week, hot or cold.

Ingredients You’ll Need

  • Protein pancake mix โ€” the base. I use Kodiak. It bakes up fluffy and bumps the protein without any extra work.
  • Breakfast sausage โ€” browned and cooled. Pork sausage is classic, ground turkey sausage keeps them leaner.
  • Shredded cheddar โ€” the melty, sharp cheese that makes them taste like the real thing.
  • Pure maple syrup โ€” folded into the batter so the sweetness is in every bite. Sugar-free maple syrup works too.
  • Water โ€” to mix the pancake batter, or swap in egg whites for even more protein.

How to Make Protein McGriddle Bites

  1. Heat the oven. Preheat the oven to 400ยฐF and grease a 12-cup muffin tin well, or use a silicone pan.
  2. Brown the sausage. Cook the breakfast sausage in a skillet, crumbling it as it goes, then let it cool. Warm sausage makes the batter separate.
  3. Mix the batter. Prepare the pancake mix with water (or egg whites) until smooth. Don’t overmix, or the bites turn tough.
  4. Fold everything in. Stir the cooled sausage, cheddar, and maple syrup into the batter until just combined.
  5. Fill and bake. Spoon the batter into the muffin cups about three-quarters full and bake for 18 to 23 minutes, until golden and a toothpick comes out clean.
  6. Cool and serve. Let them sit in the pan for 5 minutes so they hold together, then serve warm with extra maple for dipping.

Tips for the Best McGriddle Bites

  • Grease the tin well. Go heavy on the cooking spray or use a silicone pan so the bites pop right out.
  • Don’t overfill. Fill the cups three-quarters full so they have room to rise without spilling over.
  • Cool before you pull them. Give them 5 minutes in the pan. Straight out of the oven they’re fragile and fall apart.

Variations to Try

  • Mini muffins. Use a mini muffin pan and bake about 15 minutes for bite-sized, grab-and-go portions.
  • More protein. Add a scoop of protein powder to the batter for an extra boost.
  • Switch the fillings. Use bacon or turkey sausage instead, add diced jalapeรฑos and pepper jack for heat, or skip the meat and add diced bell peppers.

Storing and Reheating

Let the bites cool, then store them in an airtight container in the fridge for 3 to 5 days.

To freeze, wrap them individually and keep them in a freezer bag for up to 3 months. The trick to reheating is a damp paper towel over the bite in the microwave for 30 to 60 seconds, which steams them so they stay soft instead of drying out.

For a crisp edge, reheat them in the air fryer at 350ยฐF for a few minutes.

Protein McGriddle Bite FAQs

Can I add eggs for even more protein? Yes. Swap the water for liquid egg whites when you mix the batter, or fold in a couple of scrambled eggs with the sausage and cheese. Both bump the protein and keep the texture soft.

Can I use regular pancake mix instead of protein mix? You can. Any pancake mix works, the protein count just drops, since the protein pancake mix is what carries most of it. Kodiak is my go-to for the extra protein without extra steps.

Are these McGriddle bites gluten-free? Only if you use a gluten-free pancake mix. Kodiak isn’t gluten-free, so swap in a certified gluten-free protein pancake mix and check that your sausage is gluten-free too. Everything else in the recipe is naturally gluten-free.

Ingredients 

  • 1 lb breakfast sausage cooked
  • 2 cups protein pancake mix such as Kodiak
  • 1 ยฝ cups water
  • ยผ cup sugar-free maple syrup
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat your oven to 400 degrees F (175ยฐC). Lightly grease a 12-cup muffin tin with cooking spray or butter.
  • In a mixing bowl, prepare the pancake batter according to the instructions on the package. Typically, this involves mixing the pancake mix with water until smooth. You can also add an extra scoop of protein powder if desired.
  • Add in the cooked sausage, cheddar cheese and maple syrup to bowl. Mix until combined. Spoon pancake batter into each muffin cup, filling them about 3/4 way up.
  • Place the muffin tin in the preheated oven and bake for 18-23 minutes, or until the McGriddle bites are golden brown and cooked through. You can test for doneness by inserting a toothpick into the center of a muffin โ€“ it should come out clean when they're ready.
  • Once baked, remove the muffin tin from the oven and allow the McGriddle bites to cool for a few minutes. Then, carefully remove them from the muffin tin and transfer them to a serving plate. Serve warm with a side of maple syrup for dipping or drizzling if desired.

Notes

Let the cooked sausage cool before folding it in, so the batter doesn’t separate.

    Made these but subbed for reg. Pancake mix and turned out super delicious

    Made these with Kodiak, but swapped milk for water (2%), and used a scoop of protein powder and 138g of egg whites to increase protein. Added Vanilla and Cinnamon to the pancakes like I would normally and these were really good! They are a little dense, so would hav ehelped to microwave them for 10-15sec in the morning to soften them up a bit for my car ride, but tsill were really good regardless! Would be even better with the mentioned maple syrup dip, but I didn’t use that as I was on the go. Mine made 14 muffins but all in all a good hearty breakfast on the go!
