Simple Ingredients You Need For The Fluffy Homemade Marshmallows
You will need the following ingredients listed below to make the gelatin mixture (the exact measurements and instructions, nutrition information and full recipe are in the printable recipe card at the bottom of the post):
- Fat-free Fairlife milk
- Gelatin
- Whey protein powder – I used Unicorn Donut whey protein powder but you can use vanilla protein powder
- Optional – extra sprinkles, powdered sugar, cane sugar, honey, cinnamon, vanilla extract, etc.

How To Make
- Pour the milk into a small saucepan and sprinkle the gelatin on top. Let it sit for about 5 minutes so the gelatin can bloom.
- Heat the mixture over low heat, whisking constantly, until it thins out and is no longer frothy. Donโt let it boilโjust warm enough to dissolve the gelatin.
- Remove from heat and let it cool for a few minutes.
- Transfer the mixture to a stand mixer bowl then add in your protein powder.
- Whisk on high speed for about 5โ8 minutes, or until soft peaks form and it starts looking fluffy and glossy.
- Pour into a parchment paper lined baking pan or container, smooth the top, and refrigerate until fully set (about 2โ3 hours).
- Slice into squares using a sharp knife, toss in powdered sugar and store in the fridge.

Tips And Tricks For Best Results
- Use a flavored protein powder to make them taste extra goodโvanilla, strawberry, or anything โunicornโ is perfect.
- Donโt skip the cooling step before adding protein powder, or it might clump.
- For fluffier marshmallows, whip a bit longer into stiff peaks.
- Want a sweeter version? Add a few drops of vanilla extract or a touch of stevia.
