Simple Ingredients You Need For The Turkish Yogurt Mixture

You will need the following handful of ingredients listed below to make this easy recipe (the exact measurements, nutritional information and full recipe are in the printable recipe card at the bottom of the post):

  • Plain Greek yogurt โ€“ Full-fat works best for a creamy base. Bring it to room temp so it doesnโ€™t seize up.
  • Garlic โ€“ Freshly minced gives that signature savoury bite. Adjust to taste.
  • Eggs โ€“ Poached until just set with a runny yolk.
  • Chili onion crunch โ€“ Adds heat, texture, and richness. Chili oil works too.
  • Vinegar โ€“ Optional, but helps the eggs hold together while poaching.
  • Red pepper flakes โ€“ For extra heat and colour.
  • Fresh dill โ€“ Classic and fresh. Can use other fresh herbs as desired.
  • Optional – extra virgin olive oil, paprika, cumin, mint, parsley, other spices, etc.

How To Make

  1. In a small bowl, whisk together the room temperature Greek yogurt, minced garlic, and a generous pinch of salt until smooth.
  2. Bring a medium saucepan of water to a boil, then reduce to a gentle simmer. Stir in the vinegar if using.
  3. Crack both eggs into two small ramekins.
  4. Use a wooden spoon to stir the water into a vortex, then gently slide the eggs into the centre.
  5. Poach for 2โ€“3 minutes, until the whites are set but the yolk is still runny.
  6. Remove with a slotted spoon and transfer to a parchment-lined plate.
  7. Place the poached eggs on top of the yogurt bowl.
  8. Drizzle generously with chili onion crunch, then finish with fresh dill, pickled red onions and black pepper.
  9. Serve immediately with warm, crusty bread.

Tips And Tricks For Best Results

  • Room-temp yogurt is key. Cold yogurt + hot eggs = weird texture.
  • Keep the water at a gentle simmer, not a rolling boil.
  • Strain watery egg whites if needed for cleaner poaching.
  • Warm the chili onion crunch slightly for extra flavour.
