PUMPKIN PIE PROTEIN PUDDING

Pumpkin season is here, and Iโ€™m not mad about it. This Pumpkin Pie Protein Pudding is basically all the cozy fall vibes in one bowl โ€” but without having to turn on the oven. 

Itโ€™s creamy, sweet, and spiced just rightโ€ฆ and the best part? You can whip it up in minutes, stick it in the fridge, and boom โ€” dessert (or snack) is ready when you are.

HEALTHY INGREDIENTS YOU NEED FOR THE PUMPKIN PIE PROTEIN PUDDING

  • Cold Fairlife 2% Milk โ€“ Creamy and high in protein. Swap for almond or oat milk if you prefer.

  • Pumpkin Puree โ€“ Be sure to use pure pumpkin, not pumpkin pie filling.

  • Sugar-Free Vanilla Instant Pudding Mix โ€“ The key to thick, pudding-like texture.

  • Pumpkin Pie Spice โ€“ Brings that warm, cozy pumpkin pie flavor.

  • Vanilla Extract โ€“ Balances and enhances the sweetness.

  • Sugar-Free Cool Whip or whipped cream

  • Optional – chia seeds, cottage cheese, plain greek yogurt, chocolate chips, silken tofu, dairy free yogurt, etc.

HOW TO MAKE THE PUMPKIN PROTEIN PUDDING RECIPE

  1. Add protein powder, milk, pumpkin puree, pudding mix, pumpkin pie spice, and vanilla extract to a blender.

  2. Blend until smooth and creamy.

  3. Pour into a serving dish or small jars.

  4. Chill for at least 20 minutes to set.

  5. Top with sugar-free Cool Whip and a sprinkle of pumpkin pie spice, if desired.

STORING THIS LEFTOVER HEALTHY DESSERT

Store in an airtight container in the fridge for up to 3 days. If it thickens too much, stir in a splash of milk before serving.

CAN I FREEZE THIS PROTEIN PUMPKIN PUDDING?

Freezing isnโ€™t recommended โ€” the texture changes once thawed, becoming grainy and watery.

CAN I USE ALMOND MILK INSTEAD OF DAIRY MILK?

Yes! While Fairlife 2% milk gives this pudding a richer, creamier texture, you can swap it for almond milk, oat milk, coconut milk or any other dairy-free milk you prefer. Just note that using a thinner milk might make the pudding a little thinner.

CAN I MAKE THIS CREAMY PUDDING WITHOUT THE PROTEIN POWDER?

Absolutely. Just leave it out, but the texture will be slightly less thick and youโ€™ll miss out on the flavor boost from the vanilla protein powder.
