  • Light brown sugar
  • Large eggs
  • Pure vanilla extract
  • Large egg
  • Saltine crackers – can use different crackers such as ritz crackers or graham crackers.
  • Toffee bits
  • Semi-sweet chocolate chips – can use dark chocolate chips or milk chocolate chips.
  • Optional – peanut butter, holiday sprinkles, melted white chocolate, etc.

HOW TO MAKE

  1. Start by preheating your oven to 350 degrees F and lining a baking sheet with parchment paper. In a large mixing bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy. 
  2. Toss in your vanilla extract and the egg, and mix until everything is well combined. 
  3. In a separate bowl, whisk together the gluten-free flour, baking soda, baking powder, and sea salt. Slowly add this dry mix to the wet ingredients, stirring until everything is combined and you’ve got that perfect cookie dough consistency.
