But here we are. These High Protein Egg White Brownies are rich, chocolatey, fluffy, and honestly way more satisfying than youโ€™d expect from something made with simple ingredients and zero butter, oil or flour.

Theyโ€™re packed with protein from egg whites and chocolate protein powder, lightly sweetened, and loaded with melty chocolate chips because weโ€™re not monsters. The texture is a little lighter than traditional brownies, but they still give you that chocolate fix when you want something sweet without completely derailing your day.

How To Make The Healthy Protein Brownies

  1. Preheat the Oven – Preheat your oven to 350ยฐF and line a square baking pan with parchment paper.
  2. Whip the Egg Whites – In a large mixing bowl, whisk the egg whites until stiff peaks form. Add the lemon juice and whisk for another few seconds to stabilize the mixture.
  3. Mix the Dry Ingredients – In a separate bowl, whisk together the cocoa powder, chocolate protein powder, monk fruit sweetener, baking powder, and salt.
  4. Fold the Batter Together – Add half of the dry mixture to the whipped egg whites and gently fold until combined. Add the remaining dry mixture and continue folding carefully.
  5. Add Remaining Ingredients – Fold in the almond milk and vanilla extract, followed by half of the chocolate chips.
  6. Transfer to the Pan – Spread the batter evenly into the prepared baking pan and sprinkle the remaining chocolate chips over the top.
  7. Bake – Bake for 25โ€“30 minutes, until the brownies are set and lightly firm on top.
  8. Cool and Finish – Remove from the oven and let cool before slicing. Sprinkle with flaky sea salt if desired and enjoy.

Ingredients 

  • 200 g liquid egg whites
  • ยผ tsp lemon juice
  • ยผ cup cocoa powder
  • ยฝ cup chocolate protein powder
  • ยผ cup monk fruit sweetener
  • ยฝ tsp baking powder
  • 1 tbsp unsweetened almond milk
  • 1 tsp vanilla extract
  • โ…” cup dark chocolate chips

Instructions

  • Preheat the oven to 350ยฐF (175ยฐC). Line a square baking pan with parchment paper, leaving some overhang for easy removal.
  • In a large bowl, whisk the egg whites using a hand mixer or stand mixer until stiff peaks form. Add the lemon juice and continue whisking for a few more seconds to stabilize the mixture.
  • In a separate bowl, whisk together the cocoa powder, chocolate protein powder, monk fruit sweetener, baking powder, and salt until evenly combined.
  • Add half of the dry mixture to the whipped egg whites and gently fold it in using a spatula. Once incorporated, carefully fold in the remaining dry mixture until combined.
  • Fold in the almond milk and vanilla extract. Then gently fold in half of the chocolate chips if using.
  • Pour the batter into the prepared baking pan and spread evenly. Sprinkle the remaining chocolate chips over the top.
  • Bake for 21โ€“26 minutes, or until the brownies are set and a toothpick inserted into the center comes out mostly clean.
  • Remove from the oven and allow the brownies to cool in the pan. Sprinkle with flaky sea salt if desired before slicing and serving.
